New season arrivals: Italian harvest notes for UAE buyers

Autumn is harvest season across Italy, and it shapes what new season Italian produce reaches UAE kitchens over the following months. This note is for executive chefs, pastry chefs and purchasing managers at hotels, restaurants and caterers in the UAE and the GCC who plan winter, festive and Ramadan menus around Italian ingredients. It covers the harvest calendar, what it means for supply, and how to plan orders with Dar Sapori.

What does the Italian harvest calendar look like?

Each product follows its own cycle. As a general guide:

  • Grapes for balsamic must: harvested from September to October in the Modena area
  • Olives for extra virgin olive oil: harvested and milled from October to December in Puglia and other southern regions
  • Almonds: harvested in late summer in Sicily
  • Pistacchio Verde di Bronte DOP: harvested in late summer every other year, in odd-numbered years
  • Aged cheese: made all year, but released when ageing is complete, so supply follows milk produced months or years earlier

What does the harvest mean for your menu?

Olive oil. New oil from the current harvest tends to be greener, more bitter and more peppery. It suits finishing, bruschetta and crudo through the cooler Gulf months. Oil from the previous harvest is usually milder by now and works well for cooking and dressings.

Balsamic vinegar. Grape must cooked this autumn starts a long ageing process. Aceto Balsamico di Modena IGP needs at least 60 days in wood; Tradizionale DOP needs at least 12 years. Supply of finished vinegar is steady, but older lots are limited by what each acetaia set aside years ago.

Nuts. Pistachio and almond supply depends on the year's crop. Because Bronte DOP pistachios are harvested in odd-numbered years, 2026 is not a Bronte harvest year. Pastry teams planning festive and Ramadan menus should confirm volumes early.

Cheese. Aged cheeses such as Grana Padano DOP, aged at least 9 months, are not seasonal in the same way. Some mountain cheeses are made only from summer pasture milk, so their availability follows that window.
